I found this recipe on All Recipes, then I added my usual tweaks.
Ingredients:
- 1 Cup of Chunky Salsa
- 1 Can of Cream of Chicken
- 1/2 Cup of Water
- 1/2 Cup of Canned Corn, Drained
- 1 Cup of Minute Rice
- 2 Cups of Shredded Chicken Breast (I cooked 1 chicken breast and shredded it)
- Shredded Cheese
- 1 Bag of Fajita Size Tortillas
Directions:
Bring the salsa, cream of chicken, water, canned corn to boil in a medium sauce pan, once it starts to boil add in the rice and let simmer for 10 minutes. Then, mix in the shredded chicken and stir. Stuff each tortilla with the mixture then add shredded cheese to the top of the mixture before wrapping the tortilla.
I placed them in a casserole dish and put them in the oven for 5-10 minutes to get them warm and crispy.
These were a hit for us. I was not sure judging by the mixture how they would taste, but my husband gave me 2 thumbs up. I guess that’s a good thing! I think these would have been better for a party or as a snack. I had a hard time trying to find something to go with them as a side since most of what I would normally fix was already stuffed in the wrap. I think next time I would add some tortilla chips and salsa or queso with this and use it as a lunch item or a party side.
