It’s game day and all your friends and family are headed over, only you need good snacks to serve that please a crowd. Are you ready?! One of my husband’s personal favorites is this classic, 2-Ingredient Queso!
I can make a million homemade versions of queso and still my husband prefers the classic RO*TEL & VELVEETA mix! That’s fine with me because it’s so simple, less work on my part and more eating.
I tend to make mine either in the slow cooker or the microwave. I actually prefer the slow cooker because I can keep it on warm so that it’s nice and toasty for guests as they arrive or as they need refills.
We also always pair our queso with a variety of serving options. My husband likes to mix sausage into his, I’m a simple chips and queso girl, that’s all I need!
What do you need for 2 Ingredient Queso?
Then, of course you can add a few green onions, sour cream, and even more salsa. This time I decided to add chips to our tray, carrots, and a steak and peppers mix for those that wanted to serve it on flour tortillas.
We also have flour tortillas with our queso too, that means for the gluten free friends I usually have a separate bowl for them.
My husband is obsessed with queso and flour tortillas. Just about any time there is a big game on that he plans to watch, queso is first on his list for me to make.
This variety of queso works perfectly for all our guests and is typically the star of our party.
It’s a win for me because it is so simple to make, I absolutely love that I can get out of the kitchen and spend times with friends and family instead.

2 Ingredient Queso
Ingredients
- 1 Can of Ro-tel
- 16 oz Velveeta Cheese
Instructions
- Pour the Rotel in a microwave safe bowl.
- Cut the Velveeta into slices and place in the bowl with the Rotel.
- Microwave for 5 minutes and stir, then microwave an additional minute if needed.
- Serve with your favorite sides.
